Since Vicki (and Cathy R who has no blog I can find) asked, from the last photo in this post: peel some fresh beets, cut them into thick slices, toss with olive oil and put on the grill. I like them very crispy on the outside so I leave them for about 10 minutes per side.
They taste great with salt and pepper but add some crumbled goat cheese on top? Heaven.
