peachy keen

 


If you see this- my kitchen counters covered edge to edge- it can only mean one thing. The Peach Truck came to town

Uncoincidentally my making thoughts this week are peach-centric. The fruits all ripen at the same time,.  Each one is the platonic ideal of a peach. We've eaten a ton as is.  Made a peach cobbler yesterday (too much lemon, turns out juice of a half lemon was not a great idea) and I'll make another one (less lemony). Some might get frozen.  One year we made a big pitcher of white wine sangria with peaches,...that was good! They are so juicy and never a bad one. Tell me your fave peach recipes please.


Knitting? Still on this sleeve. Reading? Forcing myself through the last 3 hours (audiobook) of Katabasis, on 1.3x speed to help it go.  I'll only recommend it if you are deep in academia, it lampoons that world wickedly. For me? Tedious!  I'm not a fantasy fiction person so there's that too. Next week I'll have a new knit and a new book! 

Leaving you with this sweet goat who stopped to strike a pose on the way out to pasture. I was at Olympia Farm scouting, I plan to have my Knit Stars videos teaching photography for knitters segments filmed there, after the film crew visits me (GULP) at my home base. I thought why not lean into my She Shoots Sheep Shots tendencies?! We'll have a (real person) model with a shawl and also some lessons on still life shooting of their lovely farm yarn etc in the segments. I really really hope the weather will be good!  

PS I am serious about the peach recipes!

The sangria sounds amazing! I have no peach recipes... I don't think I've ever made anything with peaches! I usually just stand over the sink to catch the drips while I eat it!

Not a recipe per se, but I once had almost enough peaches to make a pie, so I threw in some blueberries, and when that still wasn't enough, a handful of frozen cherries. It was SO good!

Honestly, sliced lightly sugared (if necessary) peaches over vanilla ice cream is my platonic ideal of the way to eat a peach. They won't be ripe around here for a while, but there's a season . . . I also make a "no-bake" peach pie -- sliced peaches maybe with some berries, in a glaze made of apricot jello and cornstarch. It's an adaptation of an old church cookbook recipe - somewhat like this: https://www.food.com/recipe/strawberry-pie-97984 but I use less cornstarch. If I can find a Keebler shortbread crust (like graham cracker, but well, better) I use that. Whipped cream is a must.

I wish I had peach recipes to share, but if you've got more ripe at once than you know what you do with, you can always slice and freeze and them pop them into a smoothie!

Oh my! I love me some summer peaches! (Huzzah to the Peach Truck!) I vote for Peach Slab Pie! (Food52 has a fab recipe, any fruit will work: https://food52.com/story/7125-a-genius-slab-pie-template-for-any-fruit-growing-near-you) I love doing slab pie because they are so freeze-able! I cut the entire slab, wrap each piece tidily in wax paper and then freeze them. Once frozen, I put them in a container (I. use a Tupperware container that has no lid, but it works perfectly!) It is such a treat to pull out a "slab of pie" ... practically guilty-free snacking!

Halved peaches (pits removed and lightly oiled) are wonderful grilled alongside your choice of pork. Enjoy the bounty!! SandyKN

Fresh peaches are one of the best parts of summer. I sometimes make a rustic peach tart as I am rubbish at creating a decent looking pie crust from scratch. Also as someone suggests above, half of a peach grilled and then brushed with a little honey is a terrific dessert. Add a dollop of good vanilla ice cream and it is decadent.

Oh man, reading this post...seeing your peaches (gorgeous) and reading all the recipes, I am now drooling. I bought peaches this week to make a peach crostata (easier than a pie and it does not have to be pretty). Last one I made was peach/rhubarb/blueberry and it was delicious. Home-made whipped cream is a necessary addition. I also like one chopped up to go in yogurt for a tasty breakfast.

The Peach Truck published a cookbook, and my sister, who has an annual peach deluge, swears by it. Not just desserts but savory dishes and main courses!
