beets on the grill

Since Vicki (and Cathy R who has no blog I can find) asked, from the last photo in this post:
peel some fresh beets, cut them into thick slices, toss with olive oil and put on the grill. I like them very crispy on the outside so I leave them for about 10 minutes per side.

They taste great with salt and pepper but add some crumbled goat cheese on top? Heaven.

I just weeded my beets this am before it got too hot - i usually oil and wrap in foil. This sounds really good, and i happen to have some goat cheese in the fridge....

I'll even go out on a limb and try it with goat cheese!

Yumyumyum! I like most stuff "crispy" and I think it's the little black bits in your photograph that appeal to me most. I know what we're grillin' this weekend!!

Mmmm... couldn't wait for the weekend. The opportunity for grilled beats (and zucchini) presented itself last night! Time was short, so I pre-cooked them a bit in the microwave and then grilled. Delish. I know what I'll be scoping for at the farmer's market tomorrow...

Sounds wonderful and we love beets here! Will have to wait until it's not 100 degrees out to grill again but definitely trying this recipe.
